The gray background in legacy form fields is controlled by the Form Field Shading button, which is the second-to-last button on the Legacy Forms row of the Legacy Tools button in the Developer tab that is, just a few buttons over from the one that inserts text fields. It is completely unaffected by any of the other "shading" or "background" or "highlight" buttons.
